Mushroom Couscous

Staying healthy is not an easy task when you’re home all day and have access to junk food in your house or have it be delivered to your door. But, I’m here to give you simple recipes to make that will not only cure your boredom, but also keep you healthy during this unanticipated break! 

Today, I’m going to be sharing my mushroom couscous recipe. Couscous is a grain that is fairly similar to rice with high levels of protein and fiber and no fat. Couscous can be served with virtually anything, but here is one of my favorite couscous recipes that I have concocted: 

Ingredients:

  • 1 tps. of butter
  • 1 container of mushrooms
  • 1 box of couscous 
  • Water
  • Olive oil 
  • Salt 
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika 

Instructions

  1. Melt butter in a saucepan on high heat and, once the butter is melted, put the saucepan on medium heat and throw in the entire container of mushrooms. Cook until brown and squishy
  2. Make your couscous with boiled water, olive oil, and salt. Depending on the box of couscous you buy, the amounts of each will differ so make sure you check the box for directions
  3. After the couscous is fully cooked, add 2 tsp. of olive oil and a pinch of salt, mix, then add onion powder, garlic powder and paprika 
  4. Finally add your mushrooms, stir until evenly distributed and serve

The great thing about this meal that you can make a big bulk of it and keep the leftovers in your refrigerator for up to 3 weeks! Hope you enjoy this delicious and easy meal!
