Ingredients
- 3 or 4 large, ripe bananas
- 1/2 cup or 100 grams of packed brown sugar
- 1 egg
- 1 stick of melted butter
- 2 teaspoons of vanilla extract
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 ½ cups or 200 grams of all-purpose flour
- 1 teaspoon of cinnamon
- ¼ teaspoon nutmeg
- Pinch of cloves (optional)
- Chocolate chips (optional)
- Walnuts (optional)
- Pinch of salt
Method
- Preheat your oven to 350℉ or 177℃
- Mash bananas and egg in a bowl while the butter melts. When the butter is fully melted, set it aside a few minutes to cool. While the butter cools combine sugar and vanilla in the bowl. Then add the finally add the butter.
- For the dry ingredients, you can use a separate bowl or just add them to the bowl with the wet ingredients. In the bowl, mix baking soda, baking powder, flour, salt, cinnamon and nutmeg. Then add any extras like chocolate chips or walnuts.
- Pour into batter into a well greased muffin tin or use muffin tin liners.
- Bake for approximately 20 minutes.
- Let muffins cool for 5 minutes before enjoying!
Notes
- This recipe is generally great for substitutions. Butter can be substituted with dairy free substitute. All-purpose flour is best substituted with almond flour, a gluten free flour mix or whole wheat flour in this recipe. Eggs can be replaced by 1 tablespoon of ground flaxseed and 3 tablespoons of water combined.
