Staying healthy is not an easy task when you’re home all day and have access to junk food in your house or have it be delivered to your door. But I’m here to give you simple recipes to make that will not only cure your boredom, but additionally keep you healthy during this unanticipated break!
Today I’m going to share with you one of my favorite lunches of all time, breaded chicken with a side salad. Simple yet delicious. I’ve been making this lunch for myself since freshman year and I have yet to grow sick of it.
I personally prefer to make my breaded chicken myself, but if you’re crunching for time or simply just don’t want to make it, store bought chicken breast works too. Here’s the recipe for the breaded chicken:
Breaded Chicken
Ingredients:
- 6 boneless chicken breast halves
- 1 egg
- Italian breadcrumbs
- 1 tsp. paprika
- Olive oil
- Salt
Instructions
- Wash your hands with warm water and soap, then wash the chicken thoroughly in cold water, pat dry and leave aside
- In a bowl large enough to fit your chicken into, beat 1 egg.
- In a separate bowl, or on a plate, evenly distribute your italian breadcrumbs. Personally, I like a lot of breadcrumbs on my chicken, but it is all about preference, but make sure you put enough to cover the chicken at the very least. Then sprinkle 1 tsp. of paprika over the breadcrumbs and mix.
- Grab a piece of your chicken and coat it in the egg wash, then roll it around in the breadcrumb mixture, and place on a baking tray. Repeat this process until all of your pieces of chicken are breaded
- Drizzle olive oil over the pieces of chicken, then sprinkle paprika and salt over the chicken
- Grill the chicken on high heat for 5 minutes, then heat your oven at 300 degrees and bake for 20 minutes
- Take your chicken out of the oven and let cool
In terms of side salads, any type of salad will work with this chicken, which is the beauty of this dish. But for those of you who don’t have a favorite salad, here are 2 side salads that I highly recommend and are SUPER easy to make:
Corn and Cucumber Salad:
Ingredients
- 2 handfuls of Butter lettuce
- ½ cup of sweetcorn
- Cucumber
- 1 tsp. olive oil
- Pinch of salt
- Salad dressing of choice
Instructions
- Lay out your butter lettuce on a plate, evenly distribute the corn over the lettuce
- Cut about 6-8 slices of cucumber, stack the circular slices and then cut them into quarters
- Throw your cucumber in a bowl and drizzle in olive oil and throw in a pinch of salt, mix so the cucumber is evenly covered
- Distribute cucumber chunks over salad and serve with breaded chicken and your salad dressing of choice
Mushroom and Spinach Salad:
Ingredients:
- 1 tsp. butter
- 2 handfuls of mushrooms
- 2 handfuls of spinach leaves
- A pinch of parmesan
- Dressing of choice
Instructions
- Melt butter in a saucepan on high heat, once the butter is melted, add mushrooms to pan and bring to medium heat, stir until the mushrooms are fully cooked
- Lay out your spinach out on a plate and then evenly distribute the mushrooms over the spinach
- Add a pinch of parmesan, serve with breaded chicken and dressing of choice
