We are back for part two of Sundaes in the City and this time we went to Lab-320. Tucked away at 27 St Marks Pl, New York, NY 10003, Lab-320 offers rolled up ice cream, drinks in lightbulbs, and most specially, their dragon breath dessert. Nothing was more exciting than navigating our way around freezing cold New York, to get some liquid nitrogen, but it was totally worth it. Their dragon’s breath dessert was featured in a popular Insider video at the Chocolate Chair in LA. It is made of liquid nitrogen, so when you put their colourful, cereal bites in your mouth, you can blow out a fun cloud of smoke. The store is full of exciting assets as you can watch them make ice cream in front of you. From mixing cream and liquid nitrogen to pouring out your ice cream on a cold slate to roll up, there’s an endless amount of desserts to try.  Their rolled up ice cream featured a variety of flavours from pistachio to green tea along with bar of toppings. We ordered a cookies and cream rolled up ice cream and watched them assemble the ingredients in front of us. Then they poured it on an ice pan and mixed it around until it formed a solid structure. They spread it out and then used their tools to roll it up. We, also, were dying to try the dragon’s breath dessert that starts selling after 2pm. It is served in a cup, and you are given a long, wooden toothpick to pick up the freezing bites. They come in all sorts of colours and have a surprising crunchy, cereal-like texture. It’s endless fun to play around with the dessert. You can split it between two people, or enjoy one all to yourself. Overall, it was an amusing experience, and it was definitely a unique idea.
